Ingredients
1onion
2clovesgarlic
15gfresh gingermore or less to taste
10goilolive oil or butter
500gpumpkinpeeled and chopped into 3 cm pieces
50gred lentils
800gwateror stock
2tspvegetable stock paste
Salt & pepperto taste
Instructions
Add oil, onion, garlic, and ginger to bowl and chop 3 sec / speed 7
Sauté 3 min / 120°C / speed 1
Add pumpkin, red lentils, water and stock paste
Cook 20 min / 100°C / speed 1
Blend: 31 min / speed 5–9, increasing gradually until smooth
Taste and adjust seasoning
Add a little extra water if needed for a thinner consistency
Serve warm with buttered bread or cheese scones. A simple, comforting meal that’s easy to prepare and always satisfying.
Notes
Ginger adds a gentle warmth; adjust to taste. Red lentils create a naturally creamy texture. Freezes well for easy meals later.
